Tofu Pancakes

Tofu Tofu Tofu!

My friend, savior, trusty food guy. I love its texture, color, nutritional content of being protein-powerful, and its ease to use in cooking!!

Pancake recipe by moi, here we go:

Ingredients: 1/2 block of tofu, 1/2 cup flour, water to get the consistency to how you imagine pancake consistency to be, 1 egg, 1 tsp baking powder, 1 tsp garlic powder

Add the flour and incorporate the baking powder.

Crumble the tofu into the flour and then add the egg.

I added water for consistency as well as to make the batter less yellow because I didn’t want the egg to overpower the recipe.

I added garlic powder last and mixed the batter well.

I honestly didn’t know what I was doing at the time I was making it so making this comes with potential risks (of failure or.. potential new love).

During the first trial, I tried to make it a sweet treat but it didn’t work so I added the garlic powder and it turned out much better as a savory dish, which I ended up spoiling by adding carob powder in efforts to make it into a sweet dish again with a chocolate taste. Conclusion: savory is the good result. I love tofu and I’m happy I got to make it into yummy pancakes – my go-to type of food I like to make!

it’s 2am, i need to sleep. goodbye.

Fun Pancake Recipes: Sweet Potato, Avocado, Potato

Hey there! Been a long while since I’ve posted one of those easy-to-whip-up food recipes here! So here are three of them. Personally, I have not tried all of them out but they’re easy and sound like they would be tasty so what’s there to wait?

Sweet Potato Pancakes

Ingredients: 2 eggs, 1 medium sweet potato, (suggested to add: 1 tsp baking powder, drop of vanilla, dash of cinnamon)

Poke holes into your sweet potato and microwave it for 4 minutes – tip #1 is to cover your bowl with a wet paper towel when microwaving your sweet potato, tip #2 is to fill your bowl with a little bit of water to keep the bowl moist

Peel off the now soft sweet potato and mash it.

Combine with the eggs and prep is done!

KEY: make your pancakes small. think ‘mini’ pancake sizes, then they will come out perfect! Wait 1 minute before flipping. Serve with maple syrup!

Avo Pancake

Ingredients: 1 avocado, 3/4 milk. 1/2 flour, 1 egg, (suggested: salt, lime too)

Combine milk, flour, egg.

Add the avocado and mix well. Add the suggested if you’re feeling fancy. If not, move straight to the stove and wait-flip-wait and voila!

Potato Pancakes (savory, wow, that’s a rare find in sylv’s books)

Ingredients: 3-5 potatoes, 2 green onions, 2 tbsp flour, bit of cheese or nuch (nutritional yeast 1 tbsp), 1/2 tsp salt, 1 egg

Rinse, peel and grate the potatoes in the food processor. Squeeze the liquid out and drain the potatoes in a strainer after its out of the processor.

Finely chop the green onions and use the white portion of the green onion to incorporate with the egg, cheese, flour and salt in a large bowl – mix well.

Fold in the potatoes and combine.

Pour half of the batter into the pan and wait 5 minutes before flipping! The thickness should be 1/2 inches. You can use the green portion of the green onion as your topping and yum, sounds scrumptious and filling for the tummy!

disclaimer: the recipes are not mine but instead, from multiple inspirations online – mainly from fromyourbowl (esp. for the potato pancake) !

I made tofu pancakes once eyeballing the whole recipe but they turned out so cute and absolutely filling, which is something I get satisfied about. Tofu pancake recipe (somewhat) up next!

Overnight Oats

Wow, i never thought that I would like overnight oats because the first time i tried it, i almost threw it away- it was cold, dry, and had a weird texture. It was nothing like the normal cooked oats i always made! But i kept seeing overnight oats on Youtube (where I get all my inspos) and I thought, okay if i reaally get this done well to my liking, i could really use it to my benefit since I’ll barely have any dishes (and PLUS i love oats so…)

I tried it. It worked. I love it. so here goes!! I realize that the amount of water/milk was why I hated it previously. I put a lot more than I would for normal oatmeal. p.s. I like to eat it in a tiny glass jar in the morn when running late so do adjust the portion to your liking!!

  • 3 heaping tablespoons of organic rolled oats
  • organic almond/slightly sweet creamy rice milk fully covering the oats + an extra inch level higher
  • 1 tablespoon of chia seeds
  • 1/2 or 1 tablespoon of cinnamon depending on how much you like cinnamon

Mix furiously to get them all incorporated and then after putting the lid on, shake! Put it in the fridge overnight and in the morning, mix it again. A splash of almond milk and with berries/ freshly sliced bananas with any nut (cashews, walnuts, salted macadamia nuts) means YUM in your tum. Peanut or almond butter is optional.

Thank me later.

Banana Pancakes with Chocolate Sauce

Hey! My previous post was a recipe also featuring chocolate and bananas soo check it out!

When i made the banana bites (recipe in the previous post) i realised that I had leftover chocolate so I decided to make pancakes for my family. It ended up super delicious. Here’s my recipe!

Ingredients: 1/4 cup of flour or more if you want them harder with more texture, 1 or 2 eggs depending on how many pancakes you want to make, 1 banana, tempered chocolate (how to make tempered chocolate? check out the previous post) with a tiny bit of milk added to make it more ‘flowy’ and lastly sugar if you have a sweeeeet tooth

Method: Put the banana, eggs, 1/4 cup of flour and sugar into a blender and bleeendddd awayy!

Pour the mixture into a bowl and spray your frying pan with PAN or cover it with butter or oil.

Pour a little bit of the mixture into the pan with low heat. Wait for 35 seconds or until you see bubbles on your pancake, then flip!

Wait 30 seconds then your pancake is done. Repeat this until you don’t have anymore of the mixture. Pour the tempered chocolate onto the pancakes and you’re done! You don’t need honey or butter or maple syrup on your pancakes. The chocolate got you covered.

That’s it everyone. Chill out x

Chocolate Covered Frozen Banana-Peanut Butter Bites

Hey everybody! It’s been so so long since I have posted a recipe-post. I know I promised you guys that I would post one soon and…i didnt and im sorry! To make up for my mistake, I have decided to post two recipes in a row soooo here’s the first one!

From the title, it is a pretty long name for a snack but it’s super easy to make and ugh it tastes amazing!

Ingredients needed:

Any chocolate that you like, peanut butter (smooth is preferred), 2 bananas…… and that’s it! You can add almonds if you want.

Method: Slice 1 banana and arrange on a baking pan on top of a sheet of paper. Make sure that the space is pretty big from one banana to another because after coating it with chocolate, its gonna get very big.

Spread peanut butter on top of the banana slices (*be careful not to cut the bananas too thin!) then cut the other banana and put it above the peanut butter, making a little baby sandwich.

Put the pan into the freezer for about an hour

While waiting for the bananas, cut 2/3 of the chocolate and melt it in the microwave for 30 secs. Then remove it and stir for 15 seconds. Repeat this until all the chocolate has melted. Then add 1/3 of the chocolate into the bowl and mix. This is called tempering chocolate, where this will create a glossy effect for your chocolate. Keep mixing so that the chocolate won’t dry.

*another method is to get a saucepan filled with water and boil on medium-low heat. Get a heatproof bowl with the chocolate and put it on top of the saucepan. Be careful not to let water or steam get into the chocolate. Temper the chocolate like how i mentioned above.

It’s honestly up to you how you want to do it.

Get the bananas out of the freezer and use a fork to stab the banana and dip it into the chocolate. Cover the banana fully and then put it back onto the baking pan. Do this for all the bananas and then put it back into the freezer for 3 hours or until its ready.

btw i found this recipe on instagram! hehehe

New easy peasy RE-CI-PE!

Simple Oatmeal Recipe:

•About 1/2 or less of any type of oatmeal (not the instant one)
•The same volume of milk as the oatmeal
•The same volume of water as the oatmeal and milk
•A banana
•Cinnmon (not with sugar)
•Apples (not necessary)

1. Pour the water and milk into a saucepan first, not putting the flame too strong as the milk will burn!

2. After the liquid starts to boil and small bubbles appear, add the oatmeal into the saucepan.

3. It really depends on the type of oatmeal and how long it takes for the oatmeal to cook so CHECK THE BACK OF YOUR OATMEAL PACKAGE. The cooking time will be stated and just follow the time.

4. When it is almost time for the oatmeal to be done cooking, cut a banana into slices and put them into the saucepan.

5. Keep stirring to prevent the oatmeal from burning.

6. You can cut up an apple or half an apple into smaller pieces and put then in your oatmeal for a even mire sweeeter taste. It’s really up to you whether you like apples in oatmeal. My personal opinion is that i prefer the oatmeal with a banana only.

7. After the banana (and apple) have soften, turn off the stove and sprinkle some cinnamon on the oatmeal.

8. Andddddd…..wala! It is finished. Enjoy your meal 😉

Easy-To-Make Pancakes

This would probably be the easiest pancake recipe you will ever see! You know why? It only has two ingredients! Here’s the recipe:

2 whole eggs
1 ripe banana

1. Mix the eggs and banana in a bowl and make sure that there aren’t any banana pieces left!
2. Make your pan greasy by putting butter or spraying it with e.g. PAM or just put coconut oil.
3. Put the fire on low to medium and then scoop the batter and pour it on the pan.
4. Wait for 20-25 seconds and then flip and wait another 20-25 seconds.

I got inspired by a friend but mostly I made the recipe. It’s simple and natural! Not everyone will like it this simple so you can add almond milk or something like that. Change it a little here and there to your liking and make it your recipe! You can honey and cinnamon too. That’s what i did after i made the pancakes. Delicious…

Have fun and good luck! x
